Our mission is to combine the traditional fish and chip experience that we all know and love, with an exciting, forward-thinking menu, where no corners are cut and innovation leads.
Having seen first-hand the devastating effects that damaging catch methods such as dredging can have on the ecosystem and after learning more about the challenges that fisheries across Scotland face, we made a promise that we would do everything in our power to serve seafood with the highest possible sustainability credentials. That’s why we choose to make our own sustainable scampi options, why we choose suppliers based not on price but on quality of product and traceability credentials, it’s why we serve unpopular (but equally delicious) species of fish, why we choose to pay a premium for hand dived scallops and why we are keen to showcase how delicious seaweed and sea vegetables can be.
We are so incredibly lucky that the Moray Firth, North Sea and West Coast waters are stocked with such a diverse range of fish and shellfish. Short supply chains and deliveries six days a week means we can serve the freshest possible product. Our seafood is 100% Scottish and every fish species we serve is net caught and can be traced back to the boat that landed it. We don’t believe in a rigid year-round menu. Variety is the spice of life and seasonal variation in fish stocks in Scotland means we chop and change our menu with the seasons.
Our ethos involves a no compromise approach to procurement. We have spent over a year seeking out the best produce and researching new and exciting additions to the menu. From Buffaloumi from The Buffalo Farm in Fife, to haggis made by the butcher down the street from us. From Pickled Red Onion from Pickleboxx in Ullapool to bread rolls delivered by The Bakery, we have searched near and far to elevate your chippy tea.
